Today, I will suggest a recipe I found in the new cooking book I recently bought « Indian and Thai Curry ». Very easy to do and surprisingly delicious.
2 to 3 tbsp of oil
1 large onion (or two small)
2 tsp of mustard seed
2 tsp of crushed garlic
1 tsp of curcuma powder
2 tsp of coriander powder
2 tsp of mild curry powder
750g of boneless and skinless chicken drumsticks (I chose chicken breasts)
250ml of water
6 tbsp of plain yoghurt
Salt, pepper
Fresh coriander to garnish
In a skillet or a Wok, fry the onion for a few minutes with oil. Crush the mustard seeds and the garlic, then add to the onions. Stir for a minute and add curcuma, coriander and curry powders. Stir again for 2 minutes and add the chicken at high heat for about 5 minutes. Then add the water, salt and pepper. Once it is boiling, lower the heat to medium low, cover and let simmer for 20 minutes. Remove from heat and add the yoghurt that you would have previously made it creamy with a whip.
Service with rice and garnish with fresh coriander.
