The Pineapple Cake

Here is my favorite cake made with pineapple.  I bake and re-bake that cake anytime I can, for me and my children. An easy recipe for the best result.

 

3 eggs

100g of sugar

150g of butter

150g of flour

1 bag of baking powder

1 can of pineapple slices

 

Prepare a caramel (I do it with a little sugar that I leave to cook very slowly) that you will put in the baking pan, add the pineapple slices and you can eventually add a cherry in the middle.

 

Take the butter (should be soft) and make it creamy. Then add the sugar and mix well. Add the eggs one by one and slowly add the flour and the baking powder. Mix well.

 

If you still have some pineapple, cut it into dices and add to the mix. Pour the mix into the baking pan and bake in the oven for 20 minutes (I usually watch carefully and take a knife to check). When ready, take it out of the oven, pour some pineapple juice on the cake, let if cool and remove from the baking pan.
