Oil
1 tsp of cumin seeds
1 tsp of turmeric
1 full tsp of crushed ginger
1 full tsp of crushed garlic
Salt (for taste)
Chili powder (for taste)
1 tsp of coriander powder
400g of mixed vegetables
Fresh coriander (also known as cilantro)
1 tsp of Chat Masala (Indian spice for vegetables)
Lemon juice
Heat some oil in a skillet and add by order: the cumin seeds, turmeric, ginger, garlic, chili powder, coriander powder and the vegetables. Stir for a few minutes and add the fresh coriander, the chat masala and the juice of a half lemon. Let it simmer at low heat until the vegetables are cooked (personally, I use frozen mixed vegetables and I remove the beans and replace them by potatoes).
After it is cooked put the mix by portions into spring rolls pastries (white flour sheets which look like brick sheets but less oil absorbing) that you can find in any oriental/Asian store.
